Bitchin' Honey Soy Eggplant 09/20/2010
This lovely title is my first step in halting the prefacing of nearly every recipe with "ridiculously easy" and "5-minute" because, honestly, I don't have time for anything but. Also, and most importantly, this eggplant is indeed bitchin'.
So, tonight I was hungry. This happens most nights. I opened the fridge door. A tumbleweed blew past the almond milk and into the vast nothingness that was my empty refrigerator. All but a plump, purple eggplant graced the desolate Siberian wasteland. But wait... did I have soy sauce? Yes! Did I have honey? Garlic? Lemon juice? Yes, yes, yes! I'm alive! The semester's over, the birds are singing, and the sun is shining. Gone are the sleepless nights and shouting expletives at my laptop. This newfound freedom can mean one thing, and one thing only: It's Kyotofu soft serve time.
Now, when I think "soymilk," the terms "chalky" and "weird aftertaste" usually follow. I shy away from store-bought soy ice cream, as it's expensive and tastes weird. With that, I can honestly write that Kyotofu's soymilk ice cream is some sort of miracle. It tastes dairy. In fact, I'll go so far as to say it tastes better than dairy. Veggie Sushi With Miso Dipping Sauce 03/02/2010
I took out some surprisingly good veggie sushi yesterday from the Mecca that is Whole Foods Columbus Circle. With an empty stomach and some time to spare, you could get seriously intentionally lost in this place. I tell you this because I have. From their sit-down sushi bar to endless sample tables, I’m like a kid in the candy store section of Whole Foods.
My $6 dinner came from the daily packaged sushi counter. The miso-vinegar sauce initially drew me to this roll, and the price sealed the deal; their fish sushi can get all sorts of expensive. Sushi in hand, I walked over to the Express Line… only it was swamped. So, I did my super secret Ninja Whole Foods Trick of checking out at the café counter. Yup! As long as you buy a drink from the barista, they’ll happily check you out. You’re welcome. Carrots, spinach and avocado wrapped in seaweed and brown rice… can’t tell me that ain’t healthy! The miso dipping sauce was thick, creamy and way lower in sodium than the usual soy sauce. It was 11:30 and I was ravenous. With oatmeal in my pantry and New York City at my doorstep, I turned to Menupages for some late-night suggestions. I realized my craving wasn't the typical greasy, cheesy midnight snack. I also realized, to my greatest surprise, that not many restaurants are open till all hours of the morning. Sure, there are those 24-hour delis with questionably fresh selections and bars are surely open late, but I wanted something different - something comforting that wouldn’t send me to bed feeling like a hippo. Enter: Menchanko Tei- a Japanese ramen and soup bar open till *gasp* 12:30 AM...

She must commend herself on rocking a good semester or impressing the pants off of her colleagues during that big meeting. Sticking to a budget is important, but every once in a while it’s totally ok to blow it off for something awesome. Yes, kids, I’m talking about the sinfully sweet “s” word: splurging… also known as the $4 chocolate soufflé cupcake at Kyotofu.
“4 bucks for a cupcake?! Isn’t that… a lot?” you might say. Yes. Yes, it is a lot. It’s also the best damn cupcake you’ll ever eat... |
