Every once in a while, a savvy girl’s gotta step back and take note of her accomplishments. She must commend herself on rocking a good semester or impressing the pants off of her colleagues during that big meeting. Sticking to a budget is important, but every once in a while it’s totally ok to blow it off for something awesome. Yes, kids, I’m talking about the sinfully sweet “s” word: splurging… also known as the $4 chocolate soufflé cupcake at Kyotofu.

Kyotofu, nestled between storefronts on 48th and 9th avenue, is a relatively new Japanese dessert bar. Having opened in 2006, Kyotofu immediately met critical acclaim for their innovative Japanese fusion cuisine and crazy-good cupcakes. From sake-infused mac n’ cheese to matcha green tea tofu cheesecake, head chef Ritsuko Yamaguchi and her staff work to marry traditional Japanese ingredients to new-American cuisine. There’s also something to be said about Kyotofu’s chic interior design. Sleek yet elegant, the soft lights and neutral palette transport you to a world outside of NYC- a much quieter, peaceful world.
But back to the cupcakes. Aside from the “best cupcake in NYC” award from New York Magazine (no kidding), I’ve heard so many good things about Kyotofu that I had to venture over there myself. Braving the remnants of the dreadful blizzard, I suited up and arrived at the dessert bar 5 minutes later. With no hesitation, I ordered the large chocolate soufflé cupcake to go (this was a mission, after all), and I was on my way. As I stomped back home through the mushy snow, I recounted all the good things I had done this past year to constitute the purchase of a $4 cupcake. But with the first much-anticipated bite, I knew this was much more than just a simple dessert.

The fluffy, smooth consistency deemed this far more of a soufflé than a cupcake. The intensely chocolate-y flavor won me over with every bite… and the craziest part: it contains soybeans! Silken tofu and soymilk are both prominent ingredients in this wickedly delicious dessert. How do I know? The recipe is published online. So go ahead and bake your own award winning cupcakes. Just remember: it’s okay to splurge once in a while- just as long as it’s at Kyotofu.
