During my brief stint as a vegan, I learned a whole bunch about the emptiness of refined sugar and flour. These ingredients, once chock full of vitamins and fiber, are stripped of their nutrients, bleached white, and sold as sweet, highly caloric nothingness. That’s why when it comes to baking, I like to use unbleached, unrefined white or whole grain flour. As for sugar, I use unprocessed (raw) sugar or Agave nectar. Agave nectar is sweet like honey, but has a low glycemic index- great for diabetics or those looking to keep their blood sugar levels under control. Ingredients:
3 ripe bananas
1/2 cup unsweetened applesauce
2/3 cup Agave nectar
1 teaspoon vanilla
2 cups unbleached white flour
3/4 cups chocolate chips
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
Directions
In a large bowl, mash bananas with Agave nectar, applesauce and vanilla until combined and creamy.
In a smaller bowl, sift together flour, baking soda, baking powder, and cinnamon. Add the wet to dry. sprinkle in chocolate chips, and stir batter until just mixed.
Pour batter into sprayed loaf pan and bake in preheated 350°F oven for one hour.
