What happens when you have three dead bananas, no eggs and no butter? Vegan Banana Bread time! Though nothing beats the ol’ classic with heart stopping sticks of butter and one too many cups of refined sugar, vegan banana bread is a tasty alternative that won’t send you to the emergency room for clogged arteries.

During my brief stint as a vegan, I learned a whole bunch about the emptiness of refined sugar and flour. These ingredients, once chock full of vitamins and fiber, are stripped of their nutrients, bleached white, and sold as sweet, highly caloric nothingness. That’s why when it comes to baking, I like to use unbleached, unrefined white or whole grain flour. As for sugar, I use unprocessed (raw) sugar or Agave nectar. Agave nectar is sweet like honey, but has a low glycemic index- great for diabetics or those looking to keep their blood sugar levels under control. This banana bread recipe is a variation of vegfamily.com's. The amount of effort is minimal and it always comes out super moist and fragrant. If it were up to me, I'd add in some crunchy walnuts or pecans along with the chocolate chips, but I always seem to surround myself with nut haters...

Ingredients:

3 ripe bananas
1/2 cup unsweetened applesauce
2/3 cup Agave nectar
1 teaspoon vanilla
2 cups unbleached white flour
3/4 cups chocolate chips
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon

Directions

In a large bowl, mash bananas with Agave nectar, applesauce and vanilla until combined and creamy.

In a smaller bowl, sift together flour, baking soda, baking powder, and cinnamon. Add the wet to dry. sprinkle in chocolate chips, and stir batter until just mixed.

Pour batter into sprayed loaf pan and bake in preheated 350°F oven for one hour. 

Voila! Your house/ apartment/ NYC shoebox will smell amazing, and you'll feel great that you're not shoving your face with empty calories and fat. Enjoy it with a hot cup of tea or throw it into your kid's lunchbox for a nutritious snack. Happy munching from The Savvy Soybean!

These look amazing. Definitely on my to-bake list.

I have a similarly "Good for you without you knowing it" recipe for apple muffins. They have sugar, but substituting banana for egg and smart balance light (which is made with flax seed oil and olive oil) for butter makes them fairly guilt-free.

I love banana bread! I recently made banana bread and didn't put in enough flour... so it turned out a little mushy... LOL. But it isn't too bad. Good recipe!
