What’s better than pancakes? Pancakes that don’t leave you feeling like a buffalo. Sometimes you just need that hint of carby taste to be completely satisfied. Faux pancake, flourless crepe, sweet omelette… whatever you’d like to call it, this does the trick. It’s hearty, sweet, full of protein and only 158ish calories. Not to mention, it takes about five minutes and really fuels you for the day...
From Bethenny Frankel's Faux Pancake recipe 
Ingredients:
1/4 cup egg whites (whites of two eggs)
1 whole egg
1/4 tsp vanilla or strawberry extract
1 tsp raw sugar
handful of blueberries or sliced strawberries

1. Whisk together egg whites, whole egg, vanilla extract and raw sugar

2. Pour the mixture into a non-stick pan over medium/high heat. 


3. Tilt the pan to allow liquid to run to the edges, and push cooked egg to the center.         
This helps it to cook evenly.

4. Flip and allow other side to cook thoroughly


5. Slide on a plate and garnish with fresh berries.

How interesting. They look like crepes but are eggs. I need to take this one for a spin.

Hi Savvy, thanks for visiting my blog:) I am very curious to try these, never quite got the egg white omelette thing, but these look lovely and light. Alas frozen blueberries for me at this time of year!

This post made me smile. Pancakes are quite filling and all those simple carbs take their toll at the end of the day. This looks like a terrific pancake.

Well...I've got to say...this is an intriguing looking pancake...crepe...omeletta. I'm certainly willing to try something new...especially since I do love weekend breakfasts ;0)

Like the sound of this, especially because it makes one big pancake, all for me...also, your vanilla extract looks like serious business, love that bottle :)
