Sunday mornings are a funny thing in NYC. The streets flood with sleepy-eyed citizens, lugging their tired bones to the nearest purveyors of thick-cut brioche French toast to sop up any remaining traces of alcohol from bar-hopping, club-raving and fun-having.

Me? I like brunching. However, brunching in my kitchen, in my pj’s, in my fluffy bunny slippers is largely my preference.

Crêpes are something I like to whip up because they’re cheap, easy, delicious, versatile and a crowd pleaser… like me (hah!). You most likely already have all the ingredients in your pantry, so let’s get a-cookin’! ...

Don't forget your fillings!
Ingredients: (adapted from allrecipes.com basic crepes)
1 cup flour (can be buckwheat, whole wheat, whatev.)
2 eggs
1/2 cup water
1/2 cup milk (vanilla almond or oat milk is great for sweet crêpes)
1/4 tsp salt
2 tbsp melted butter or margarine ( I like EarthBalance)


Directions:

1. Whisk together wet ingredients (eggs, milk, water, melted butter) and slowly    
    incorporate dry ingredients. Make sure there are no lumps!

2. Heat a non-stick frying pan on medium heat and add a drop of high-heat oil. Scoop 
    batter on to pan, picking up and tilting the pan in a circular motion until the batter     coats the surface evenly.

3. Cook crepe for 1-2 minutes on each side until the bottom is a golden brown. Flip 
    and let cook on other side. Serve with whatever you please!

You have no idea how much my Hubby begs to get crepes made every other weekend...and of course I really don't like them either. LOL.

Why don;t I make crepes more often? These look so yummy and so easy and I adore crepes - especially spread with nutella! I'm totally making these next weekend!

I always thought that crepes were super difficult too! Turns out I'm far better at turning these out than pancakes. I love how easy they are and the possibilities for fillings are endless!! Last weekend I combined a scoop of butter, one apple, a dash of cinnamon and raw sugar in a small pot and made a 5-minute apple pie filling. Delish!
