As my vegetarian blog doesn’t exactly boast the best track record for slimming, thigh-forgiving snacks around NYC (see here, here, here and here), I figured I’d at least give my recipe portion a bit of an effort. So here we go with the first rousing installment of Desserts That Won’t Make You Fat or Broke: Simple Baked Brown Sugar Apples.

Now, when I think fall, I think apples. Nothing groundbreaking there. But tender, piping hot apples soaked in brown sugary, buttery goodness? Now that’s a fantastic fall dessert.

This recipe is extremely simple and cheap. The flavors work beautifully together, and it’s perfect for entertaining or curling up on the couch to watch an ANTM marathon. Come to think of it, is ANTM ever anything but a marathon? But I digress. Here’s the recipe:

Servings: 4

Ingredients:
- 4 large apples (I find that Golden Delicious, Fuji, and Honeycrisp hold up the best!)
- 1/3 cup packed brown sugar
- 1 tsp ground cinnamon
- 1 tbsp unsalted butter or margarine 
 
note: These measurements are all very arbitrary. 1 apple = 1 person, and you can shove as much brown sugar, cinnamon, butter and whatever other ingredients you desire down the cored bit. It’s apples, sugar and butter. To quote Ina Garten: “How bad could that be?” 


Other possible ingredients:
- nutmeg
- chopped walnuts
- vanilla extract
- toasted pecans
- raisins (personally, the bane of my existence... but I can see how they'd work nicely)
- brandy (woo woo!)


Directions:
  1. Preheat oven to 350 degrees
  2. Wash apples and peel skin off of top 1/3 of apples.
  3. Core the apples only ¾ deep, leaving the bottom so there’s a well for all the sugary buttery goodness.

4.   Place apples in a shallow baking dish and fill bottom with enough water to just 
      cover the very base of the apples
5.   Mix brown sugar and cinnamon (and whatever else) and stuff the apple wells with  
      mixture
6.   Place a pat of butter on top of each stuffed core well
7.   Place dish in the oven and bake 30-40 minutes until tender (do the fork test!)

8.   Remove from oven. Don’t freak. Your apples will look wrinkly and ugly. But they will   
      be delicious.
9.   Remove from pan immediately and serve with your favorite low fat fro-yo.
10. Instantaneously become everyone’s best friend.

OH lovely. This is the sort of pudding that can be made when it feels like there's nothing in the house. Delicious! And I agree that one way or another, ANTM is always a marathon :)

It also makes your kitchen (in my case, entire apartment) smell unbelievable! After 40 minutes of this in the oven, I guarantee you'll be eyeing your furinture hungrily...
let me know if anyone has a different version I should try!!
